Potassium Nitrate is used as a preservative to keep meat coloration fresh. Potassium Nitrate reacts with red blood cells and helps to give salted meat, fish, Chinese sausage, other sausages, bacon, pickled fish and fermented pork an attractive red color. And potassium nitrate has properties capable of preventing growth of multiple types of bacteria, especially clostridium botulinum, which is capable of creating highly hazardous botulin that is usually found in food stored in sealed containers such as canned food and ready-made food contained in ordinary sealed cans. Because of the aforementioned reasons, the Food and Drug Administration permits the use of potassium nitrate in food products only in specified amounts.

**The Thai Ministry of Public Health has prescribed that potassium nitrate be used in food in amounts not to exceed 500 milligrams (0.5 grams) per kilogram of food.**
